Traditional Gond Ladoo Recipe

Ingredients:
1 cup edible gum (Gond)
1 cup whole wheat flour (atta)
¾ cup desi ghee (clarified butter)
¾ to 1 cup powdered jaggery (adjust to taste)
¼ cup chopped almonds
2 tbsp chopped cashews
2 tbsp raisins
1 tsp cardamom powder
Optional: dry grated coconut, melon seeds, poppy seeds
Instructions:
Fry the Gond
Heat 2–3 tbsp ghee in a deep pan.
Fry gond in small batches until it puffs up like popcorn.
Drain and set aside on a paper towel to cool. Crush lightly if needed.
Roast the Flour
Put the remaining ghee and whole wheat flour in the same pan.
Roast on low heat for 15–20 minutes or until golden brown and fragrant.
Add Nuts and Raisins
Add chopped almonds, cashews, and raisins. Roast for additional 2–3 minutes.
Add Jaggery
Switch off the gas. Let the mixture cool slightly (but not completely), then add powdered jaggery and cardamom powder and mix.
