To create the Japanese fruit sandwich, you will need the following ingredients:
Ingredients:
8 slices of soft white bread
1 cup of whipped cream or mascarpone cheese
An assortment of fruits like strawberries, kiwis, pineapples, and peaches
5 teaspoons of sugar
1 teaspoon of rum (optional)
Instructions:
1. Start by washing, peeling, and cutting the fruits into thin slices.
2. In a medium bowl, pour 1 cup of heavy (whipping) cream and whisk on low speed using an electric hand mixer.
3. Once the cream starts to bubble, add 5 tsp of sugar and 1 tsp of rum (optional), then whisk on medium-high speed until the cream thickens.
4. When the cream forms peaks, take the bowl out of the ice bath and switch to a hand whisk. Whisk until you reach the desired consistency, aiming for medium peaks where the cream holds its shape but is spreadable.
5. Place 4 slices of shokupan (Japanese milk bread) on your work surface. Spread whipped cream on each slice evenly. Reserve some cream to fill in the gaps after adding fruit.
6. Arrange the fruit on one slice of bread per sandwich, considering the appearance when cut. Add more whipped cream to fill the gaps between fruits.
7. Put the top slice of bread on the fruit with the whipped cream side facing down.
8. Wrap each sandwich tightly in plastic wrap on all sides without changing their orientation.
9. Mark a cutting line on the plastic wrap of each sandwich for a neat cut.
10. Gently press the sandwiches between plates and refrigerate for at least an hour or overnight.
11. Unwrap a sandwich, cut it in half along the marked line, and repeat with the other sandwich.
12. Remove the crusts from each sandwich while keeping them closed. Keep the crusts for making Shokupan Crust Rusks.
13. Reveal the cross-section of the sandwich.
14. Serve immediately, ensuring the sandwich remains chilled if transferring.
15. Enjoy the Fruit Sando soon after cutting it, preferably on the same day.
