  • 1 tsp Black Pepper powder (freshly ground is preferred).

  • 1 tsp Roasted Cumin powder.

  • ½ tsp Turmeric powder (mainly for a light yellow hue).

  • 1 tsp Chaat Masala.

  • Salt to taste.

  • Fat: 2 tbsp Olive Oil or melted butter.


Step-by-Step Instructions
1. Prep the Chicken
  • Clean the chicken and pat it thoroughly dry. If the chicken is wet, the lemon juice will not adhere properly.

2. First Marination (The Zest)
  • Combine the chicken with lemon juice, lemon zest, ginger-garlic paste, and salt in a bowl.

  • Let it rest for 20–30 minutes. The acidity of the lemon starts to "cook" and tenderize the chicken right away.

3. Second Marination (The Flavor)
  • Add the thick yogurt, green chilli paste, black pepper, cumin powder, turmeric, and fresh coriander to the chicken.
